It's up to manufacturers how machines play or can be played. If they have a lumpy profile or entice players to go all-out for a big win there's fuck all any remote monitoring system can do about it, apart from alarm every time the percentage drifts beyond a certain threshold. The settings will have to be sympathetic to each individual game and it's volatility, or it will be going off every five minutes.
At the end of the day a game should be designed with the best profile and features that hopefully will get a lot games played through, and take the most money. You shouldn't have to have the extra worry of designing a game around a load of parameters from some monitoring equipment. If people want to force a game and see what happens they should be able to.
I can understand having a system to notify the operator about door events, the number of times the refill switch has been made, power-cycling and so on, but trying to restrict how a game can be played is never going to work.

Maybe they will copy the Quiz machines
you rip a JP and then the glass all disapiers (bye bye noel face) and the machine literally folds in on its self and removes the game and then unfolds to become a reeking £500 (so now no one can win)
or
You rip a jackpot and as the reels are going round playing the music, they will remotely Plugg it and you then hear
"OWW HOW DO YA FEEL, YOU DID NOT WANNA SEE THAT" from the machine which is annoying in itself but then the LCD displays L..O...V..E..F..R..O..M..O..G..L..A followed by "get out your barred"
