Pie Factory - a few questions.

Hi all, this is my first fruit machine I have owned and would like to know something.
The machine all works perfectly and so on so forth but would like to customise it the way I would like.
I have done this by setting it to £25 20p but am wondering, what settings would I need to alter the % and is there a list of dip-switches on the net I could lookup?
Also is it possible to wipe all the tally memories, as though it's a 'new' machine? I assume if I was to do this it could pay out erraticly though for a while till the averages were more spaced.
One last thing, the engineer who came and showed me it working ect showed me the test options, is there a list of the menu options at all?
Sorry for the Spanish Inquisition but I'm a born tinkerer, I'm bored of fiddling with computers so have another 'toy' to keep me busy.
